This zesty avocado and edamame dip requires just four ingredients, and is fast and easy to make!

IngredientsĀ 

  • 1 cup edamame, shelled
  • 2 ripe avocados
  • 1 lime, juiced
  • salt to taste
  • 1 tbsp cilantro, finely chopped (optional)
  • 1 tbsp onion, minced (optional)
  • 1 tsp jalapeƱo, minced (optional)
  • Pinch cayenne pepper (optional)

InstructionsĀ 

  • In a food processor, pulse edamame and avocado until a chunky.
  • Add in the lime juice and salt and pulse until desired consistency.
  • Add in the optional ingredients (cilantro, onion, jalapeno and cayenne) in final step for a zesty variation.
  • Chill and serve with corn chips, crackers or your favorite cut-up veggies.

Notes

Age: 9 months and up (babies under 1, omit the salt)
Storage: store in an air-tight conatiner in the fridge for up to 5 days.Ā
