Zesty Avocado + Edamame Toddler Dip
This zesty Avocado + Edamame Dip requires just four ingredients! Youāll love it because itās healthy, easy, and delicious, and your toddler will love it because they can dip and feed themselves. I see you at the playground; dried sweet potato puree streaked across your cheek. Ā I know you havenāt gone to the bathroom, in your own home, without an audience for months.Ā I smile and I nod, because even though we have never met, I understand.

IngredientsĀ
- 1 cup edamame, shelled
- 2 ripe avocados
- 1 lime, juiced
- salt to taste
- 1 tbsp cilantro, finely chopped (optional)
- 1 tbsp onion, minced (optional)
- 1 tsp jalapeƱo, minced (optional)
- Pinch cayenne pepper (optional)
InstructionsĀ
- In a food processor, pulse edamame and avocado until a chunky.
- Add in the lime juice and salt and pulse until desired consistency.
- Add in the optional ingredients (cilantro, onion, jalapeno and cayenne) in final step for a zesty variation.
- Chill and serve with corn chips, crackers or your favorite cut-up veggies.
